Ayala Le Blanc de Blancs is a prestigious and sophisticated Champagne produced by Champagne Ayala, a well-respected and long-standing house located in Aÿ, in the heart of the Champagne region. The house is renowned for creating champagnes that are fresh, elegant, and often marked by a higher proportion of Chardonnay in their blends.

As the name suggests, Le Blanc de Blancs is made entirely from Chardonnay grapes, a traditional varietal used in Champagne. This "white from whites" style is celebrated for its purity, elegance, and the ability to showcase the unique characteristics of the Chardonnay grape.

Elaborated in limited quantities, exceptionally during the most expressive years, Le Blanc de Blancs brings to the light all of the elegance and the purity from the Chardonnay of the Côte des Blancs. This terroir is home to the most beautiful Chardonnays with a great ageing potential, including three Grands Crus which form the fundamentals of the blend.

Chouilly, the House’s own vineyard, complete and subtle, brings a silky texture, a freshness, and an aromatic diversity to the cuvée. Le Mesnil-sur-Oger brings the tension, the precision, and a beautiful ageing capacity, in perfect harmony with the chalky minerality of Cramant. A signature blend, enriched by a selection of remarkable Premiers Crus.

Brilliant and contemporary, this prestigious cuvée flourishes in a special bottle, promoting the development of the organoleptic profile during the 6 years of ageing on lees in the cellars.

On the nose, you can expect fresh and lively aromas of citrus fruits, green apple, white flowers, and hints of brioche or almond, reflecting the influence of lees aging. On the palate, it's crisp and precise, showing a wonderful balance of fruit, minerality, and a bright, refreshing acidity. The finish is long and clean, with lingering notes of citrus and minerality.

Due to its elegance and acidity, Ayala Le Blanc de Blancs pairs beautifully with a range of foods like Turbot with beurre blanc, turkey with endives and lime, Crottin de Chavignol goat cheese, or an exotic fruit Pavlova.
